A night with chef Pedro Wolcott

Dinner’s on the (Glass) House. 

Chef Pedro Wolcott started cooking at a young age in the Republic of Panama where he was raised. He learned how to cook from his mother and grandmother and now is working to pass down their knowledge around Afro-Antillano & Latin Caribbean cuisine. 

Glass House was pleased to host Chef Pedro Wolcott of Guacaya Bistreaux for a three-week Latin Caribbean styled pop-up dinner series served tapas style. The series was hosted as a precursor to the launch of Guacaya Bistreaux located in the North Loop, Minneapolis and opened in the Spring of 2022. 

Dinner was accompanied by libations crafted by Robb Jones of Meteor Bar MPLS.
