Glass House is elated to announce the very first of our Chef in Residence series in November of 2021.
We were pleased to host Chef Pedro Wolcott of Guacaya Bistreaux and his authentic Latin Caribbean style cuisine for a three week series. The series was a precursor to his up and coming restaurant launch in the North Loop in Spring 2022: Guacaya Bistreaux.
Dinner was served up Tapas style accompanied by libations crafted by Robb Jones of Meteor Bar MPLS.

Having grown up in the Republic of Panama Chef Pedro Wolcott started cooking at a young age with his mother and grandmother passing down their knowledge around Afro Antillano & Latin Caribbean cuisine.

Paying homage to its Latin Caribbean roots & heritage Guacaya Bistreaux will feature authentic Latin Caribbean tapas and libations. Gris gris creole and Cajun influences are also hinted at as part of their mix of their unique cuisine. Set to open June of 2022.
